I made this at 6pm. Don't tell anyone how easy it was.

One pan. Twenty minutes. I felt like a genius.

Okay so picture this.

Last Thursday. 6pm. I'm standing in my kitchen doing absolutely nothing for four full minutes. Just standing. Staring into the middle distance like a very tired houseplant.

The kids are somewhere being feral. My brain has fully clocked out. Submitted its resignation. Gone home for the day. And these small humans who live in my house keep existing and requiring nutrition like it's some kind of daily commitment I signed up for.

So I made this.

Twenty minutes. One pan. And when it was done I stood over the stove eating directly from the pan like an absolute gremlin and feeling inexplicably proud of myself.

Peak wellness. This is what it looks like.

🍽️ One Pan Garlic Chicken and Veggies

What you need:

  • 2 chicken breasts, cut into chunks

  • 1 cup broccoli florets

  • 1 bell pepper, sliced

  • 1 cup cherry tomatoes

  • 4 cloves garlic, minced

  • Olive oil

  • Salt, pepper, paprika, thyme

What you do:

Heat olive oil on medium high. Season your chicken with everything on that list. Cook until golden, about 6-7 minutes. Remove and set aside and genuinely try not to eat it yet.

Same pan. Little more oil. Garlic for 30 seconds. Your kitchen now smells like you have your life completely together. This is a lie but a comforting one.

Broccoli and peppers in. Four minutes. Tomatoes and chicken back in. Three more minutes until everything gets friendly and the tomatoes do that beautiful blistering thing.

Done. You're actually done.

Eat it as is, over rice, or stuffed in a tortilla because sometimes dinner needs to be portable and honestly we don't need to explain ourselves.

Here's why I keep making this on my worst days specifically.

One pan. Real protein. Actual vegetables. Garlic that makes the whole house smell like I'm a person who planned ahead. Nothing in this recipe requires a special trip anywhere or a culinary degree or a version of me that has more energy than I currently possess.

It's not glamorous. It's not going to end up on a food blog with beautiful lighting and fresh herbs artfully scattered around the plate.

It's just dinner. Real dinner. Made by a real tired woman who still showed up for herself at 6pm on a Thursday when showing up looked like garlic chicken eaten standing over a stove.

That counts. It always counts.
