And we're starting with breakfast.
Because let me tell you morning is where it all falls apart for most of us. You're rushing, the kids need something, you haven't even brushed your teeth yet, and suddenly it's 11am and you've had nothing but coffee/tea and good intentions.
So here's what I make when time is not on my side.
🍳 Kai's 10-Minute Veggie Egg Scramble
High protein. One pan. Zero excuses.
What you need:
3 eggs
Handful of spinach
½ cup cherry tomatoes, halved
¼ bell pepper, diced
Salt, pepper, garlic powder
A little butter or olive oil
What you do:
Heat your pan on medium. Toss in the butter, then the peppers. Give them 2 minutes just enough to soften.
Add the tomatoes and spinach. Stir until the spinach wilts down. Takes about 60 seconds.
Crack in the eggs. Season. Scramble everything together until just set don't overcook them, they'll keep cooking off the heat.
That's it. You're done.
Eat it straight from the pan if you want. I won't judge. I've done it.
