What nobody tells you about meal prep
We think we need fancy containers and perfect portions.
friend! I used to be depressed at the grocery store.
I would look at those perfect meal prep photos on my phone. All those neat containers with colorful food. I thought I had to spend my whole Sunday cutting vegetables and making fancy meals.
The few times I tried, I spent 5 hours cooking. My family ate two meals and then we were back to tin food for dinner.
Here's what I learned: I wasn't the problem. Meal prep doesn't have to be hard.
What if there was an easier way? One that works even when your kids are cranky and you only have 20 minutes.
Here's what I do now:
On Sunday, I pick one protein. Chicken, beans, whatever looks good. I cook extra.
I make one grain. Rice, pasta, whatever. I make a big batch.
I wash some vegetables. I don't cut them. Just wash them.
That's it.
On Tuesday when everyone is hungry, I heat up the protein. I warm up the grain. I cook the vegetables. I add some sauce. Dinner is ready.
This works because simple is better. Your brain likes easy patterns. It doesn't like hard choices.
When you're tired, you need fewer decisions. Not more work.
Some weeks I only cook the protein. Some weeks I forget the vegetables and we eat fruit. That's okay.
The goal isn't perfect. The goal is having real food when you're too tired to think.
